Mardi Gras Indians

The cultural performances of Mardi Gras Indians are rooted in the history of racial discrimination in New Orleans. Free and enslaved Black people were banned from attending Mardi Gras by white New Orleans carnival krewes. Instead, African American communities celebrated Mardi Gras by incorporating West African rhythms, drumming, dance, and masking traditions into their own festivities, and masked as Indians to tell stories of enslaved people escaping slavery and finding refuge in Native American communities. Masking allowed Black Americans to celebrate their African heritage under a more acceptable guise as "Indians", while showing solidarity with, and paying tribute to, Native American ancestors andย allies.

Two seafood jambalaya-stuffed bell peppers, filled with a flavorful mix of chicken, sausage, and shrimp, then topped with a rich, creamy lobster sauce. (Shrimp is mixed throughout, so not every pepper may have visibleย pieces.)
